PREPARE:

Wash well then cut off both ends. Never eat the rhubarb leaves, they contain oxalic acid which is a poison. Cut rhubarb into chunks.

WAYS TO EAT:

  • Add rhubarb to a strawberry crisp.
  • Sprinkle raw diced rhubarb into oatmeal or yogurt.
  • Roast rhubarb:
    • Toss with maple syrup.
    • Place on baking sheet and bake at 375 for 20-25 mins.
    • Add to salads, grain bowls, pancakes, and muffins.
