PREPARE:

Wash potatoes under cold running water. Leave the skin on, it's the most nutritious part.

WAYS TO EAT:

  • Bake purple potato chips:
    • Slice potatoes very thin, drizzle with olive oil, sea salt, and dried herbs.
    • Roast in the oven at 350 for 20 minutes.
  • Roast cubed potatoes with other veggies like broccoli, purple onion, cauliflower, etc.
  • Use purple potatoes in potato salad.
  • Chop up and add to scrambled eggs.
  • Make mashed purple potatoes.
