PREPARE:

Wash under cold running water with a vegetable brush. If organic, do not peel off the skin, it's the most nutritious part.

WAYS TO EAT:

  • Cut into little sticks and eat with hummus or dip.
  • Shred carrots:
    • Add to salads, slaw, soups, stews, pasta, tacos, smoothies, etc.
  • Roast:
    • Drizzle with olive oil, sea salt, and pepper.
    • Roast in the oven for for 20-30 minutes at 350.
  • Add to a stir fry.
