PREPARE:

Wash well under cool water. Cut the pumpkin in half and remove the seeds (keep for roasting). Cut into wedges along the groove lines, then peel the skin off with a vegetable peeler. Cut into chunks.

WAYS TO EAT:

  • Add pumpkin cubes to soup, stir fry, casseroles, and stews.
  • Make pizza with pumpkin slices and goat cheese.
  • Roast:
    • Drizzle cubes with olive oil and sea salt.
    • Roast in the oven at 350 for 30 minutes.
    • Add roasted cubes to salad, pasta, and grain bowls.
    • Roast pumpkin seeds in oven for 20 minutes at 250.
  • Steam pumpkin cubes:
    • Eat as a side, drizzled with olive oil and sea salt.
    • Make creamy pumpkin soup with steamed pumpkin puree, nutmeg and vegetable broth.
