PREPARE:

From a can - drain into a colander and rinse.Dried - place 1 cup dried beans in a bowl. Cover with water and soak overnight, or 6 hours. Transfer to a pot, cover with fresh water, bring to a boil, then simmer for 1 hour.

WAYS TO EAT:

  • Add kidney beans to chili, soups, and stews.
  • Toss into salads and grain bowls.
  • Combine for a three bean salad:
    • Add to black beans and northern beans.
    • Drizzle with olive oil, sea salt, and fresh herbs.
  • Blend into a spread:
    • Mix with olive oil, garlic, and cumin for sandwiches.
  • Use kidney beans instead of ground meat for tacos.
