Chia is a member of the mint family with roots that go back to Mexico, where the Aztecs used chia seeds to make the first energy drink! A spoonful of chia seeds mixed with water would fortify the Aztecs for long marches that could last more than 24 hours. Native tribes of California drank this energy booster to stay strong over really long distances, too. They also used chia seeds to reduce fever and inflammation, to disinfect wounds and to purify drinking water.

PREPARE: Buy chia seeds packaged or from bulk bins.

  • Sprinkle chia seeds on toast and nut butter, and on peanut butter sandwiches.
  • Add a scoop of chia seeds to smoothies and oatmeal.
  • Mix 1 tablespoon of chia seeds with 3 tablespoons of water and use as an egg replacement in baked goods.
  • Use chia seeds instead of breadcrumbs.
  • Add chia seeds to a healthy beverage and drink up.

5 star dinner Polka Dot Pudding
Polka Dot Pudding

Serves 4

Ingredients

  • ⅓ cup chia seeds
  • 1½ cups vanilla coconut, almond, flax or milk of choice
  • 2 tbsp. maple syrup
  • 1 tsp. vanilla (if milk doesn't contain vanilla)
  • Toppings: berries, fruit, nuts, seeds, etc.

Method

  • Stir all ingredients together, except the toppings, in a large wide-mouth mason jar.
  • Put the lid on tightly, and store in the fridge overnight.
  • In the morning, scoop ½ cup out into a dish and add your favorite toppings for a delicious, brain powering breakfast!
  • This will keep in the fridge for a week. Polka Dot Pudding also makes a great snack or dessert.

How to Store

After first use, keep packaged seeds in the fridge. Pour bulk seeds into a plastic zip bag or glass jar and cover tightly. Store in a cool, dry place for up to five years.

How It Grows

The chia plant grows up to 5 feet tall with white or purple flowers that sprout in clusters from a spike at the end of each stem. Once the flowers dry out, the seeds are extracted. Each seed is usually no larger than 2mm or 1/16 of an inch.
