This multi-talented food is classified as both a fruit and a vegetable, and was buried along with ancient Egyptians. Intrepid explorers brought watermelon on board to stay hydrated -- easier than trying to find fresh water on the salty seas! Most watermelon is oblong and dark green with bright red pulp, but this fruit/veggie can be light pink, yellow and even orange. Size can vary from little 5 pounders to enormous 200 pounders. They can be seedless or full of edible seeds. They can even be square! Square watermelons were perfected by Japanese farmers so they would fit better into smaller refrigerators. How do they grow? In glass boxes!

Quick Preps

PREPARE: Wash the outside well. Cut watermelon in half, turn each half, cut side down, and carefully shave off the rind. You will be left with a watermelon cone, with no rind, which you can cut into chunks.

  • Cut watermelon into slices, cubes or chunks and eat as a snack or dessert.
  • Add watermelon to smoothies with spinach and avocado.
  • Blend watermelon with water and ice cubes to make watermelon slushies.

Serves 6

Ingredients

  • 1 seedless watermelon, small
  • ⅓ lb. feta cheese, wedge sliced ⅛ inch thick, about 12 slices
  • Basil leaves, fresh

Optional Orange Vinaigrette

  • ½ cup cold pressed, extra virgin olive oil
  • ¼ cup fresh squeezed orange juice
  • 1 tbsp. honey

Method

  • Remove rind from watermelon and slice flesh into 3 squares.
  • To assemble salad, layer one piece of watermelon on one piece of feta. Repeat.
  • Combine orange vinaigrette ingredients in mason jar and shake to mix.
  • Drizzle salad with orange vinaigrette if you like, and garnish with fresh basil.

How to Store

Whole: Keep at room temp for about a week, then place in the fridge for another 2 weeks. To freeze, remove seeds and rind. Cut into pieces, then place in airtight containers or freezer bags for up to a year.

How It Grows

Watermelon grows on a sun-loving vine that can stretch up to 20 feet long! As watermelon ripens, there's an area on the bottom that turns from almost white to a rich yellow.
