Fun Facts

Cherries, plums, beefsteak, grapes -- they're all different types of tomatoes! First discovered in South America and named after the Aztec word xitomatl which means plump thing with a belly button, tomatoes can be red, green, yellow, pink, black, brown, white or purple! Northern Europeans called them wolf peaches and assumed they were poisonous. Today people love tomatoes. They'll even throw them at each other! Every August people toss 150,000 overripe tomatoes in a giant food fight during La Tomatina festival in Buñol, Spain.

Quick Preps

PREPARE: Wash under cold water, remove stem and cut up as desired.

  • Add tomatoes to pasta salad, green salad and grain salad.
  • Eat sliced tomatoes on toast drizzled with olive oil and sea salt.
  • Peel tomatoes and cook in a heavy pot with olive oil and spices to make tomato sauce.
  • Eat sliced tomatoes with goat cheese.
  • Add sliced or diced tomatoes to pizza, casseroles, mac and cheese, eggs and soups.
  • Use cherry tomatoes to make veggie kabobs.

5 star dinner Bruschetta Bites
Bruschetta Bites

Yield: Makes approximately 12 -16 bruschetta crackers

Ingredients

  • 3 medium tomatoes
  • 2 garlic cloves, minced
  • 3 fresh basil leaves, minced
  • 2 tbsp. olive oil
  • ¼ t. - sea salt
  • Crackers of choice

Method

  • Dice tomatoes into small cubes and place in a large bowl.
  • Add minced garlic, minced basil leaves, olive oil, and sea salt. Mix well.
  • Put a scoop of the tomato mixture on each cracker. Enjoy!

How to Store

Fresh, whole: Keep at room temperature until ripe, then place in fridge for 2 or 3 more days. To freeze, chop into pieces and place on cookie sheet in freezer. When frozen, transfer to an airtight container or freezer bag for about 8 months.

Fresh, chopped:Place in a container or wrap tightly with plastic wrap, then put in the fridge for up to 4 days. To freeze, see directions above.

How It Grows

Viny tomato plants typically grow 3–10 feet high. Staking is often necessary -- so is protection from wildlife that's also fond of tomatoes.
