The sweet, colorful raspberry is a special type of fruit called an aggregate -- with over a hundred individual tiny fruits, called drupelets, each filled with one seed. Around since prehistory, they've been used as a medicine to soothe sore eyes, and as a toothpaste! With more than 200 species, raspberries can be red, orange, gold, purple, or black. They're the third most popular fruit in the U.S., after strawberries and blueberries.

Raspberry Fingers with Cacao Pudding

Serves as many as you like

Ingredients

  • Fresh raspberries, lightly rinsed

Cacao pudding

  • 1 avocado
  • 1 banana
  • 3-4 tbsp.cacao powder
  • 1 tbsp. maple syrup
  • 1 tsp. vanilla
  • ½ to 1 cup water or coconut milk

Method

  • Blend pudding ingredients together.
  • Let your kids put raspberries on their fingertips and then dip them into the cacao pudding before gobbling.

How to Store

Fresh, whole: Only leave out at room temperature for same-day eating, otherwise store in the fridge for up to 3 days in the original container or a shallow container covered with plastic wrap. |To freeze, wash, dry and place on a cookie sheet in single layer in the freezer. After berries freeze, put them in airtight containers or freezer bags and freeze for up to a year.

How It Grows

Raspberries grow on sun-loving, prickly bushes, sometimes called canes. They can reach up to 60 inches tall with a three foot spread. There are three main types of raspberry plants, including summer-bearing, ever-bearing and dwarf.
