Swiss chard is part of the beet family and goes by many names, from rainbow chard to spinach beet. Its leaves grow on stems that are all different colors. Bundle them together and the stems look like a rainbow!

Quick Preps
PREPARE: Both the leaves and stems are edible! Wash them well, then tear with your hands or chop into pieces.
- Sauté or steam Swiss chard for 1-2 minutes. Season with sea salt and eat as a side dish.
- Add chopped Swiss chard to scrambled eggs, stir fries, and soups.
- Wrap up your favorite protein – tuna, chicken, chickpeas, black beans – in a Swiss chard leaf.

Star-Powered Recipe
Yield: 4 servings
Ingredients
- 8 oz. spiral quinoa noodles
- 2 tbsp. sesame oil
- 1 tbsp. minced ginger root
- 1 garlic clove
- 1 big or 2 small bunches of Swiss chard
- 1-2 tbsp. coconut aminos
- ¼ cup sunflower seeds
- 1 red pepper, thinly sliced
Method
- Cook noodles according to package instructions. For al dente noodles, reduce cooking time by 1 minute.
- Heat 2 tbsp. sesame oil over medium/low heat in a large saucepan. Gently cook minced ginger and garlic for 2-3 minutes.
- Wash and chop leaves and stems, then add to the saucepan along with red pepper slices. Stir to coat with the garlic oil mixture, and turn the heat to medium/high until greens start to wilt.
- Add a splash of coconut aminos (1-2 tbsp.) and stir to combine. Throw in sunflower seeds and cooked pasta. Serve in bowls.
How to Store
Raw: Put fresh chard in a plastic bag and store in the fridge for up to 3 days. Do not wash until ready to use.
Freeze cooked chard only. Wash and cut off stems. Plunge into boiling water for 2 minutes and then chill in ice cold water. Dry off completely, then place in airtight containers or freezer bags. Chard will keep for up to a year in the freezer.
How It Grows
Chard leaves grow from one to three feet tall, and can be green with white, red, orange, purple, gold or pink stalks.
