Ingredients
- 1 cup purple cabbage
- ½ cup cilantro
- ½ cup pine nuts (or other nuts or chickpeas)
- 1 garlic clove, minced
- ¼ cup olive oil
- 1 ½ tbsp water
Method
- Make pesto by combining ¼ cup cabbage, ½ cup cilantro, ¼ cup pine nuts (or other nuts or chickpeas), 1 minced garlic clove, ¼ cup olive oil, and ¼ cup water together in a food processor; process until smooth.
- Use the pesto with pasta, on pizza, on chicken or salmon, or as a chip or veggie dip!
How to Store
Raw: Put raw purple cabbage in a plastic bag, then store in the fridge for up to a week. Do not wash until you're ready to use it.
Cooked:Refrigerate cooked purple cabbage within 2 hours in an airtight container for 3 to 5 days. To freeze, place your purple cabbage filled containers in the freezer for up to a year.

Purple cabbage grows on a short, stubby stem. Cabbage plants can grow up to two feet high.
