These little legumes are seeds hidden in pods. Each pod houses one or two lentil seeds that can be green, orange, black or red. They were podpular way back in the Stone Age! In India, lentil is known as dal and in Egypt, the national dish kushari is made with lentils. In Italy and Hungary, eating lentils - symbolizing little coins - on New Year's Eve represents hope for a prosperous new year. Lentils also inspired the word lens since lentils are shaped like a convex lens. There's even an annual lentil festival in Washington state!
Star Power
Looking for a lots of protein, fiber, folate and magnesium? Lentils are full of them. Magnesium is especially good for cardio health, and keeps the blood happy with plenty of oxygen and nutrients; lots of fiber keeps cholesterol levels down and sugar levels stable. There's energy-boosting iron, too, and because lentils contain both insoluble and soluble fiber, lentils work to keep the digestive system working beautifully. Did you know that because of their high protein content, lentils are a tasty meat substitute?
Quick Preps
PREPARE:
- Place lentils in a strainer and wash under cool water. Bring 3 cups of water to a boil, then add 1 cup of water. When water returns to a boil, lower to a simmer and cover for 20-30 minutes. Tip: Cook lentils at the beginning of the week, and keep in an airtight container in your fridge. Throw lentils into your meals all week long!
- Add cooked lentils to salad, salsa, soup, and casseroles.
- Add ½ cup lentils to the water when cooking brown rice, quinoa or other grains.
- Purée lentils into soups to make them thick and creamy.
- Toss lentils with soba noodles, broccoli and leeks.
- Drizzle lentils with olive oil, ginger and garlic.

Keep several different colors of lentils on display in clear containers in your kitchen. They're fun to look at!
Star-Powered Recipe
Serves 6
Ingredients
- 1 tbsp. coconut oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp. fresh ginger, minced
- 1 small sweet potato, diced
- 1 apple, skinned and diced
- 1 tsp. turmeric
- ½ tsp. cumin
- ½ tsp. sea salt
- 1 cup orange lentils
- 4 cups vegetable broth
Method
- In a large soup pot, heat coconut oil over medium heat. Saute chopped onion for 3-4 minutes until soft, then add minced garlic and ginger. Cook another 1-2 minutes, stirring regularly.
- Add sweet potato, apples, turmeric, cumin and sea salt. Stir well and cook another 1-2 minutes.
- Add lentils and broth. Bring to a boil, then reduce to a simmer for 20 minutes.
- Serve and enjoy!
How to Store
Dried, uncooked: Store unopened in a cool, dry place for up to a year. After opening, store dried beans in an airtight container or put original package in a resealable plastic bag for up to a year.
How It Grows
Lentils grow in pods on bushy plants that reach 18 to 24 inches high. The smooth, oblong pods each contain one or two lentils.
