Green beans aren't always green! These legumes grow in pods that are green, yellow, purple, or yellow with colorful streaks of red or purple. They aren't always called green beans, either! You can call them string beans, snap peas, or try the French haricot verts (ah-ree-coh verrrrr)!

Quick Preps
PREPARE: Wash the beans and cut or snap off both ends.
- Eat raw as a quick and easy snack, or dip in hummus.
- Sauté for 3-5 minutes with coconut oil, sea salt, and black pepper.
- Drizzle with olive oil and roast for 20 minutes at 425 degrees. Toss cooked beans with minced garlic and lemon juice.
- Steam for 2-3 minutes, then toss with olive oil, minced garlic, and lemon juice.

Serves 4-6
Ingredients
- 1lb. fresh green beans, washed and ends trimmed
- ½ cup garbanzo bean flour
- 2 eggs, beaten
Panko Mixture
- 1 cup Panko (Japanese style bread crumbs)
- ½ cup Parmesan cheese (loosely packed)
- ¾ tsp. garlic salt
- ¼ tsp. fresh ground pepper
Method
- Preheat oven to 425 degrees. Line two baking sheets with parchment paper, set aside.
- Place flour, eggs and Panko mixture in three separate shallow bowls.
- Dredge beans in flour, then eggs, then Panko mixture.
- Place on baking sheet. Bake for 10-12 minutes, until golden and crispy.
- Serve immediately.
How to Store
Raw: Store unwashed raw green beans in a plastic bag and place them in the fridge for 3 to 5 days. Cook beans first before freezing. Place cooked beans in an airtight container or freezer bag for 12 to 18 months.
How It Grows
Green beans grow either as a bush that's 8 to 20 inches high, or as a vine that can meander for up to 10 feet!
