Grapefruit is not a grape fruit! It got its name from the way it grows in clusters just like grapes. Grapefruit is actually a happy accident -- a hybrid between an orange and a pomelo. A relatively recent discovery, grapefruit was grown in the 1700s on the Caribbean island of Barbados. A hundred years earlier, the pomelo made its way to the island from Indonesia. Grapefruit holds the distinct honor of being the only citrus fruit to originate in the Americas. There are a quite a few varieties, but the ones that make it to the grocery store are blonde, pink and red. Some varieties are seedless, while others are stuffed with up to 50 seeds each.

Ingredients

  • 1 grapefruit

Toppings:

  • Coconut sugar

Method

  • Slice grapefruit into thin circles, then into fours, creating 4 pizza shapes with skin on.
  • Arrange grapefruit pizzas on a platter for serving.

How to Store

Fresh, cut up: Wrap tightly with plastic wrap or place in an airtight container before storing in the fridge for up to 4 days.|To freeze: Wash, peel, then divide into sections. Remove excess flesh and seeds. In a saucepan, combine 2 ¾ cups sugar and 4 cups water, mix until the solution is clear and bring to boil. Pour cooled syrup over grapefruit. Put grapefruit and syrup in a covered airtight container or freezer bag for up to a year.
