Quick Preps

PREPARE: Remove stems and any yellow or discolored leaves. Wash well and cut into halves or quarters.

  • Steam for 5 minutes, then toss with olive oil, black pepper, and sea salt.
  • Sauté in coconut oil for 3-5 minutes with a pinch of sea salt and red pepper flakes.
  • Drizzle with olive oil, sea salt, and black pepper, then roast in the oven for 20 minutes at 350 degrees.
  • Add cooked Brussels sprouts to pasta, salads, soups, stir-fries and casseroles.

Ingredients

  • 20 Brussels sprouts
  • 2 tbsp. olive oil
  • Sea salt and black pepper, to taste

Method

  • Chop off the bottom of each Brussels sprout so the leaves fall off. Carefully remove all the leaves and place in a large mixing bowl.
  • Toss the leaves with olive oil, sea salt and black pepper, then spread out on baking sheets, making sure the leaves do not overlap.
  • Bake at 350 degrees for 7-10 minutes, until crisp.

How to Store

Raw: Place raw, unwashed Brussels sprouts in a plastic bag and store in the fridge for up to 5 days.

Cooked:Cooked Brussels sprouts should be refrigerated in airtight containers within 2 hours of cooking, and for no longer than 5 days. To freeze, place your sprout-filled airtight containers in the freezer for up to a year.

Brussels sprouts grow on stalks up to 1.5 in wide and 3 feet tall, with thirty to forty sprouts per stalk!
