Apples are members of the rose family, and there are more than 7,500 varieties of apples grown around the world. They vary in size from as teeny as a cherry to as hefty as a grapefruit, and grow on trees that can live to the ripe old age of 100. One variety of apples, the Granny Smith, was named after a grandma in Australia!

Apples not only contain fiber and antioxidants, they're also a great source of boron, which keeps us mentally alert and terribly clever. Eat the skin -- that's where lots of the antioxidants and fiber are hiding. But don't eat the seeds -- they have cyanide inside of them. Fortunately, there's not enough cyanide to actually poison us -- unless we eat about 200 apples. Did you know that it takes four to five years for apple trees to produce their first apples?

PREPARE: Wash apples. Use veggie wash on non-organic apples. Keep them whole or cut into slices, strips, or chunks.

  • Keep an apple in your bag to eat as a snack.
  • Dip slices into almond butter or honey.Add diced apples to salads, or sliced apples to coleslaw.Make apple crisp fries: cut into strips, sprinkle with cinnamon, and bake for 20 minutes at WHAT TEMPERATURE?

Brainiac Mash

Serves 4-6

Ingredients

  • 3 medium gala apples, peeled, cored and finely diced
  • 1 ½ cups walnut halves, lightly toasted and chopped
  • ¼ cup organic apple juice
  • 1 ½ tsp. ground cinnamon
  • 1 tbsp. maple syrup

Method

  • In a large bowl, stir all ingredients together. Store, covered, at room temperature until ready to serve.

How to Store

Raw: Keep apples at room temperature until ripe, or for 3 days max. Once ripe, place them in a plastic bag and refrigerate for up to 4 weeks.
